Quick Vegetable Soup
• 1 pound ground beef or ground turkey
• 1 can whole kernel corn
• 1 can diced tomatoes (I like fire roasted)
• 1 package of frozen mixed vegetables
• 1 can of no salt added tomato sauce
• 1 onion, chopped
• 2 cups of water
• Salt and Pepper to taste
• 2 white potatoes peeled and cubed

Brown and drain ground beef/turkey in a large pot (5 to 6 quart). Add corn, diced tomatoes, mixed vegetables, tomato sauce, onion, water, and salt/pepper. Cook on medium high heat until boiling. Cover, turn heat to medium and cook for 20 minutes. Add potatoes. Cook an additional 10 to 15 minutes or until potatoes are tender. Enjoy!
